How do access access the OpenVPN connection logs?

I want to ensure that connection was successfull.

If you are using the Connect to OpenVPN Server step, the output log path will be in $OPENVPN_LOG_PATH. You can add a script step to move/copy this to the deploy directory you specify in the Deploy to bitrise.io step
