The main aim is to basically change iOS export type, say from “development” to “ad-hoc”. For now the only way to do that (or the way I can find) is to add a new app and choose “ad-hoc”.

That is not necessary at all! It depends on your building solution, but the main Xcode Archive and Export step has an input where you can adjust this.
